We grew these winter squash at the farm for two years. It’s called Muscade de Provence, an heirloom from the South of France. They can get quite big–15 to 20 pounds each and look dazzling on the kitchen table for Fall decor. But they aren’t just for show. Though a little too watery for my taste, they have a wonderful mellow flavor and fine texture. In a country where butternut squash dominates, it’s really exciting to find other kinds of squash to experiment with.
